Homemade Chicken Noodle Soup From Scratch

Homemade chicken noodle soup from scratch is actually quite easy. And let’s be real, there is nothing like chicken noodle soup from scratch!

What you need to make homemade chicken noodle soup from scratch:

For the broth

  1. 3.5 pound whole chicken
  2. 1 head of garlic (cut in half horizontally)
  3. 2 carrots cut into chunks
  4. 2 celery sticks cut into chunks
  5. 2 onions (quartered)
  6. 1 tablespoon whole peppercorns
  7. 2 bay leaves
  8. 4 sprigs of thyme
  9. Water (to cover)

For the soup

  1. 1 tablespoon olive oil
  2. 1 large onion (diced)
  3. 3 garlic cloves (minced)
  4. 2 carrots cut into chunks
  5. 2 celery sticks cut into chunks
  6. 2 cups shredded chicken (from the whole chicken cooked in the broth)
  7. 2 quarts chicken broth (see above ingredients)
  8. Egg noodles (see recipe below)
  9. Salt and pepper to taste

For the egg noodles

  1. 2 eggs
  2. 2 cups flour
  3. 2 teaspoons salt
  4. 2 tablespoons milk


Directions:

For the broth

  1. Add the whole chicken to a stock pot or dutch oven.
  2. Add remaining broth ingredients then add just enough water to cover the chicken.
  3. Cover and simmer for 1.5 hours or until chicken is cooked thoroughly.
  4. Strain the broth into a bowl, remove chicken and de-bone/shred.
  5. Set the chicken aside and discard the broth vegetables.

For the soup

  1. Heat oil in a large pot (I reuse the one I used for the broth) and saute the onions, garlic, celery and carrots for about 10 minutes or until soft.
  2. Add the broth and chicken to the pot.

For the egg noodles

  1. Combine the eggs, milk and salt then slowly add in the flour until no longer sticky (use more flour if needed).
  2. Roll out the dough onto a floured surface and roll out to about 1/4 inch thickness. I use a pizza cutter to cut strips of noodles.
  3. Add the noodles to the soup and simmer for a few minutes or until the noodles are cooked to your liking.
  4. Add salt and pepper to taste. Next, you can also add extra thyme or parsley if desired.
