It’s 4th of July weekend and yesterday is catching up to me. Between having a few cocktails and staying up late and kids getting up early, I am exhausted today. But mom life doesn’t let you take breaks haha. I was feeling like a hard seltzer this fine Sunday which I knew could either make me more tired or feel much better. But I also felt like some more caffeine was just what I needed. When I realized I had some Baileys in my cabinet, I thought – what a great idea to make an iced coffee cocktail! Here is a Baileys iced coffee recipe I used to make this awesome brunch-time or summer cocktail with tired mamas in mind.
I am not much of a Baileys person, but it was just what I needed today to enjoy the holiday weekend yet not go overboard, as I have been trying to cut down my alcohol intake after being quarantined for a few months. I can see this recipe being a great drink for brunch when you still crave some coffee but you may also ready for a cocktail. Can anyone else relate?
After getting all the ingredients together I knew I was going to love this recipe. I had some leftover coffee in the fridge which worked out perfectly so that I could enjoy this drink iced, as it’s a hot day in southern California. If you want it hot, serve it without ice.
Baileys Iced Coffee Recipe
Ingredients:
- 2 ounces Baileys
- Coffee (you can make it hot or cold)
- Splash of milk, cream or dairy substitute (I used organic vanilla soy milk)
- Whipped cream
- Cinnamon stick
- Ground cinnamon
Directions:
- Add some ice to a cup.
- Add the Baileys.
- Top it off with coffee and a splash of your favorite add in (if you’d like). It does taste great just with black coffee too.
- Stir it with the cinnamon stick and use it as a garnish.
- Add whipped cream and sprinkled cinnamon on top.
