You can make Olive Garden’s Pasta e Fagioli soup right at home with this copy cat recipe! I love this soup because it is really hearty and is a meal in itself. It’s even better paired with some garlic bread.

Copy Cat Olive Garden Pasta e Fagioli Soup Recipe
Ingredients:
- 1 pound ground beef
- 1 whole onion, chopped
- 3 celery stalks, diced
- 3 carrots, diced
- 24 ounces tomato sauce
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 can kidney beans, rinsed and drained
- 1 can white beans, rinsed and drained
- 3 cloves minced garlic
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1/2 pound pasta (cooked separately)
- Grated parmesan cheese
Directions:
- Cook the ground beef then add it to the VitaClay pot.
- Add the remaining ingredients, except the pasta.
- Cook on fast for 1 hour.
- Cook the pasta separately according to the package directions. I used penne pasta.
- Add desired amount of pasta to a bowl and top with the Fagioli soup hot and fresh from the VitaClay.
- Top with grated parmesan cheese and enjoy!
